Guarda come realizzare la ricetta del classico risotto alla milanese per riscoprire con semplicità la più antica tradizione

INGREDIENTI

300 g Riso superfino
20 g Midollo di bue (a piacere)
80 g burro
40 g cipolla
50 g Vino bianco secco
Zafferano 2 bustine
1 L Brodo di carne
60 g Parmigiano grattugiato
sale

Tritare finemente la cipolla e farla appassire in un tegame a fuoco molto dolce per 5 minuti circa, con il midollo e 20 grammi di burro.

Aggiungere il riso e farlo tostare a fuoco vivace per un minuto, mescolando.

Bagnarlo con il vino bianco e farlo evaporare. Versare poco alla volta il brodo bollente, mescolando di tanto in tanto. Cuocere il riso per 16/20 minuti circa, secondo il riso prescelto. A metà cottura, aggiungere lo zafferano. Salare se necessario.

Togliere il tegame dal fuoco, aggiungere il burro rimasto ben freddo e il formaggio; mantecare, mescolando, rendendolo morbido e cremoso. Farlo riposare un munito con coperchio; servire.
