If any time of the year deserves a little shake-up, it’s summer. We spend most of our year stuck in the daily grind of office life, sending our kids to school, or even sending ourselves to school, all while the daylight gets shorter and the weather gets colder.

It’s easy to get into a rut. And it’s hard to pull yourself out.

Which is precisely why summertime means it’s time to let loose. Shake things up. Do things differently. Live life to the fullest. Enjoy every moment. Soak up the sun. Take our family to the beach. And laugh.

When it comes to food, I like to change things up in the summer. I like to drink. I like to drink a lot. And no, we’re not talking about wine and cocktails (how naughty of you!). I mean, I literally find myself downing liquid like it’s my job.

Everything from smoothies, juices, iced teas, lemonades, milkshakes and gigantic mason jars full of lemon water. You’ll be hard-pressed to find me sans beverage in the summer.

Luckily, one of the great things about New York in the summer is the variety of icy cool drinks you can find. There are street vendors selling fresh squeezed lemonade, juice bars in every neighborhood and Starbucks on practically every corner.

And thank goodness for it. Because otherwise, I feel like I’d be shriveled up like a prune.

Like last weekend for example. I was strolling in midtown with Matt, we made our weekly stop at Whole Foods in Columbus Circle, took the pup for a stroll and you would not believe the heat. I don’t even think it was actually that hot out, but I felt drenched. The humidity was crazy and all my body craved was a big iced tea.

Hallelujah, there was a Starbucks right in front of me. It saved the afternoon.

And by the time we got home, we were both ready for another something to drink.

Not quite time for cocktails (we have a semi-strict 5 o’clock happy hour rule in our house), we settled on another sort of beverage.

Milkshakes.

Honestly, I hadn’t had a milkshake since I was a little girl. It had been years, if not decades. But this recreation was everything I remembered.

It’s…

ultra creamy
super decadent
dairy-free
gluten-free
vegan
packed with peanut butter
and totally healthy

And it really is a “milkshake”.

It probably sounds impossible, or at least counter-intuitive, to have a milkshake that tastes so good and is actually healthy. But I’m not in the business of making stuff up. It’s always my goal to create luscious treats that you don’t have to feel guilty about eating.

For this healthy peanut butter milkshake, you’ll need just 5 simple ingredients:

bananas
cashew milk
quinoa
cinnamon
and peanut butter


And a food processor. No bowls, no mixing, no stirring, no freezing. Just process and slurp.

Talk about easy-peasy.

Oh, and it’s totally breakfast-worthy, basically like having a smoothie. But shh…I won’t tell if you won’t!

The Healthiest Peanut Butter Milkshake

If you love classic milkshakes, you're going to adore this healthy peanut butter milkshake! It's simple, nutritious and not too indulgent!

Ingredients

3 frozen bananas
1/4 cup peanut butter
2 – 4 tablespoons cashew / non-dairy milk or more as needed
1/4 cup cooked quinoa
Dash of cinnamon


Instructions

1. Add bananas to a food processor and process until broken up into little pieces. Add peanut butter and process again.

2. As mixture starts to come together, add milk 1 tablespoon at a time, allowing mixture to get more smooth between each addition.

3. Once mixture is totally smooth, add cooked quinoa and cinnamon and process for another 10 – 15 seconds.

4. Transfer milkshakes into two jars. Top with peanut butter and a little quinoa. Stir gently with a knife so you get that swirling effect.

5. Enjoy immediately!
