Tagliarli tutti della stessa altezza ed escludere il più possibile la parte bianca.
Raschiare leggermente la parte bianca rimasta e scottarli in acqua per 3 minuti circa.
Accomodarli nei vasi, cospargerli con un po' di sale e chiudere ermeticamente il vasetto.
Passarli poi alla sterilizzazione che si protrarrà per mezz'ora circa dal momento dell'ebollizione.
