Cantonese Poached Chicken with Ginger Scallion Sauce (aka White Cut Chicken 白切雞)

  1. Boiled a pot of hot water add star anises (5), ginger (5 slices), green onion (4) and 3 Tbsp of salt
  2. Put a whole chicken inside the pot
  3. High heat boil the chicken for 5 minutes, then turn heat off and let it sit for 15 minutes
  4. Re-do this process 2 more times. Make sure flip the chicken upside down every time when turn the heat back on.
  5. To make sure the chicken is done, use a chopstick to polk the chicken leg to make sure no juice come out
  6. For the ginger scallion sauce, chopped 3 oz of ginger and scallion, then add 1 tbsp of salt
  7. Mix ginger, scallion and salt in a bowl, then add 3 Tbsp of hot oil.
