CROSTINI DI POLENTA, CREMA DI CARCIOFI, PECORINO E MAGGIORANA

INGREDIENTI

  • 150 g di pecorino in scaglie
  • 2 carciofi
  • foglioline di maggiorana

PER I CROSTINI DI POLENTA

  • 150 g di farina di mais
  • 600 ml di acqua
  • 2 cucchiai di olio extravergine di oliva
  • sale

PER LA CREMA DI CARCIOFI

  • 6 carciofi
  • mezzo limone
  • 1 spicchio di aglio
  • 100 ml di vino
  • 4 rametti di maggiorana fresca
  • olio extravergine di oliva
  • sale e pepe

PREPARAZIONE

In una casseruola porta a ebollizione l'acqua con il sale e l'olio.

Versa a pioggia la farina di mais e cuoci girando di tanto in tanto per il tempo indicato nella confezione.

Versa la polenta in una pirofila leggermente oliata.

Lascia raffreddare completamente.

Una volta fredda, sforma e taglia a fette spesse 1,5/2 cm.

Scalda bene una griglia e arrostisci leggermente le fette di polenta.

Prepara la crema di carciofi: mondali, eliminando le parti più fibrose e tagliali a spicchi.

Immergili in acqua acidulata con il limone per non farli annerire.

In una padella appassisci dolcemente l'aglio in camicia con un filo di olio, aggiungi i carciofi ben scolati,, sfuma col vino, sala e prosegui la cottura a fuoco basso con coperchio.

Una volta cotti, lascia evaporare il liquido in eccesso, rimuovi l'aglio e frulla grossolanamente fino a ottenere la crema.

Ultima con la maggiorana tritata.

Componi ogni piatto mettendo alla base il crostino, la crema di carciofi spalmata, quindi ultima con scaglie di pecorino, carciofi crudi mondati e tagliati a lamelle, e foglioline di maggiorana.
