VELLUTATA AI FIORI DI ZUCCA

INGREDIENTI

  • 15 fiori di zucca
  • 3 patate
  • 150 g di ricotta
  • 1 tuorlo d'uovo
  • 30 g di parmigiano grattugiato
  • 40 g di olio extravergine d'oliva
  • 1 litro di brodo vegetale o acqua e dado

PREPARAZIONE

Fare appassire nel boccale con l'olio, i fiori di zucca, dopo averli lavati e tolto il pistillo: 3 min 90° vel 4.

Unire 3 patate tagliate a cubetti grandi, 1 litro di brodo vegetale, aggiustare di sale e cuocere: 15 min 100° vel 1.

Unire la ricotta, il tuorlo e il formaggio.

Frullare: 40 sec vel 6.

Servire con crostini di pane.
