Earl Grey Loaf Cake πŸ‹πŸ°

Ingredients

  • 1 cup milk
  • 2 Earl Grey tea bags
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • For the Lemon Honey Glaze:
  • 1 cup powdered sugar
  • Zest of 1 lemon
  • 2-3 tablespoons fresh lemon juice
  • 2 tablespoons honey

Directions

  • Preheat the oven to 350Β°F (175Β°C). Grease and flour a 9x5-inch loaf pan, then set aside.
  • In a small saucepan, heat the milk until steaming but not boiling. Remove from heat and add the Earl Grey tea bags. Steep for 10-15 minutes, then remove the tea bags and allow the milk to cool to room temperature.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs, one at a time, followed by the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the Earl Grey-infused milk, beginning and ending with the dry ingredients. Mix until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake for 45-55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  • While the cake is baking, prepare the lemon honey glaze. In a small bowl, whisk together the powdered sugar, lemon zest, lemon juice, and honey until smooth.
  • Once the cake is done baking, remove it from the oven and let it cool in the pan for 10 minutes. Then, transfer the cake to a wire rack set over a baking sheet.
  • Pour the lemon honey glaze over the warm cake, allowing it to soak in. Let the cake cool completely before slicing and serving.
