Ingredients

  • 1 package refrigerated cinnamon roll dough
  • 1/2 cup chopped pecans
  • 1/4 cup caramel sauce
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Whipped cream, for serving
  • Additional caramel sauce, for drizzling

Directions

  • Preheat the oven to 350ยฐF (175ยฐC). Grease a 12-cup muffin tin.
  • Unroll the cinnamon roll dough and cut each roll into 2 equal pieces. Press each piece into the bottom and up the sides of the muffin cups, forming mini pie crusts.
  • In a small bowl, mix together the chopped pecans, caramel sauce, granulated sugar, melted butter, egg, and vanilla extract until well combined.
  • Spoon the pecan mixture evenly into each cinnamon roll crust.
  • Bake for 15-18 minutes, or until the pies are set and the crust is golden brown.
  • Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  • Serve the mini caramel pecan pies topped with whipped cream and a drizzle of caramel sauce.
