1 3/4 cups (220g) all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup (113g) unsalted butter, softened
1 cup (200g) granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup (120ml) whole milk
1/2 cup (120ml) heavy cream
2 tablespoons sugar
1 teaspoon gelatin
2 cups (300g) fresh strawberries, hulled and sliced

Preheat the oven to 350Β°F (175Β°C). Grease and flour two 8-inch round cake pans.
In a medium bowl, sift together flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.
Gradually add the dry ingredients to the creamed mixture alternately with milk, beginning and ending with the dry ingredients. Mix until just combined.
Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Remove cakes from the oven and let cool in pans for 10 minutes. Then transfer to wire racks to cool completely.
Meanwhile, prepare the strawberry filling. In a small bowl, sprinkle gelatin over 1 tablespoon of cold water. Let it sit for 5 minutes to bloom.
In a saucepan, combine heavy cream and sugar. Heat over medium heat until sugar dissolves and the mixture is hot but not boiling.
Remove from heat and stir in the bloomed gelatin until completely dissolved. Let the mixture cool to room temperature.
In a separate bowl, gently fold sliced strawberries into the whipped cream mixture until well combined.
To assemble the cake, place one layer of the cake on a serving plate. Spread the strawberry filling evenly over the cake layer. Top with the second cake layer.
Refrigerate the cake for at least 2 hours before serving to allow the filling to set.
