Decadent Chocolate Orange Cupcakes ๐ซ๐

Ingredients:
- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 large eggs, at room temperature
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup buttermilk, at room temperature
- Zest of 1 orange
- 1/2 cup freshly squeezed orange juice
Directions:
- Preheat your oven to 350ยฐF (175ยฐC) and line a muffin tin with cupcake liners.
- In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the eggs and sugar together until pale and fluffy.
- Slowly add the vegetable oil and vanilla extract to the egg mixture, beating until well combined.
- Alternately add the dry ingredients and the buttermilk to the wet ingredients, beginning and ending with the dry ingredients. Mix until just combined.
- Fold in the orange zest and orange juice until evenly distributed throughout the batter.
- Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- Remove the cupcakes from the oven and let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
