Cucumbers tuna boats

INGREDIENTS

• 1 large English cucumber, cut in half
• 1 (5- ounce) can white albacore tuna in water. drained
• 3 tablespoons minced banana peppers
• 2 tablespoons minced red onion
• 1 tablespoon mayonnaise
• 1 tablespoon Dijon mustard
• 1 teaspoon dill
• ¼ teaspoon salt
• ¼ teaspoon black pepper

INSTRUCTIONS

1. Slice the cucumber halves in half lengthwise. Use a spoon or corer to remove the inside flesh of the cucumber. Set aside for another use.
2. In a mixing bowl, stir together the tuna, banana peppers, red onions, mayonnaise, Dijon mustard, dill, salt and pepper until well combined.
3. Divide the mixture inside the cucumber crevice and enjoy immediately.
