Tomato season calls for short pastry! π π
Serves: 2-6
Ingredients:
- 2 1/4 cups all-purpose flour (340g)
- 1/2 tsp kosher salt
- 3/4 (170g) cup cold butter, grated
- 6 tbsp ice water (90ml)
- 1/4 cup 3-year-old cheddar, grated
Method:
- Toss flour, butter and salt into a food processor with half the water. Blitz and add the rest of the water slowly. When it comes together, remove it and wrap it in plastic wrap in a large disk shape. This step can also be done by hand.
- Allow the pastry to chill for 30 minutes.
- Roll out to 1/6 of an inch and brush with egg wash before baking. I personally like to bake at 400F for a perfect crispy-to-tan ratio.
