For anyone desiring regular updates on the wide world of cider, I curate a
weekly newsletter that goes out on Fridays. I scour social media, blogs,
and traditional media for the most interesting cider news I can find:

http://www.ciderguide.com/newsletter-archive/

It's a quick recap that takes only a few minutes to scan. It isn't a
commercial venture and I have no plans to solicit donations, recruit
sponsors, or otherwise "monetize" it. While I do encourage readers to
subscribe so they'll receive the newsletter via email, it will always be
freely available on my site.

I hope you'll find my newsletter a pleasant and informative complement to
the Cider Digest!

Cheers,

Eric West

In Andy Brennan's article in the last digest on items for a start-up cidery
budget, looks like there's a small slip-up:
> Crown Caps bag of 1000 $130
That ought to be 10,000 for $130. Even in small quantities, crown caps are
only a few cents each.

Gentle readers: Somehow the subject of the last article of digest 2014 was
botched in the ToC but not at the article itself. (For the life of me, I
don't know how that happened.) It -has- been corrected in the current year
archives.

I have been giving away a lot of cider this year, and it's been fun. I'm
wondering about starting a cider club for those who would like to get more
and pay for their share of the harvest. Is this a way to legally "sell"
surplus cider, if you keep it a private club and call them shares? Just
wondering if others have started CSAs (Community Supported Agriculture)
with cider as the main product? I'm aware of a few cideries that have
CSCider, but they have winery licenses, etc. I'm thinking of doing this
just with friends and only sharing about 20 gallons. Any thoughts on this
practice?

Thanks Rick,
That is great information. I have managed to refine my research on the web
somewhat and it appears that for high quality cider apples the price will
be from .25 to .80/lb tops, fresh juice for $10 to 20/gal, depending on who
is the buyer.
I am trying to avoid the alcohol biz in Utah at all costs. After starting
and running a winery for 11 years here, I can say that the fees, taxes and
other regs make it impossible for a small producer to survive.

So I will make a plan to offer fresh juice and apples to "home brew" types
who are serious enough to be interested in real cider.
The most suitable method for storing fresh juice sans pasteurization or
sorbate is freezing-- as far as I can tell.
Does this sound correct?
I am interested in finding out how fresh cider makers manage their juice as
it is sold.

I've been going through the zipped archives of the digest and learned much
there. Thanks so much to Dick Dunn for the work.
BTW, I have a guitar student who is from Almaty, Khazakstan and when I
asked him about apples, he flipped out and couldn't stop talking!
