Chai Layer Cake ๐Ÿฐโœจ

2 1/4 cups all-purpose flour
1 1/2 cups granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cardamom
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 cup unsalted butter, softened
4 large eggs, room temperature
1 cup whole milk, room temperature
2 teaspoons vanilla extract

Preheat oven to 350ยฐF (175ยฐC). Grease and flour three 8-inch round cake pans.
In a large mixing bowl, combine flour, sugar, baking powder, salt, cinnamon, ginger, cardamom, cloves, and nutmeg. Whisk together until evenly distributed.
Add softened butter to the dry ingredients and mix on medium speed until the mixture resembles coarse sand.
In a separate bowl, whisk together eggs, milk, and vanilla extract until well combined.
Gradually add the wet ingredients to the dry ingredients, mixing on medium speed until the batter is smooth and well combined, scraping down the sides of the bowl as needed.
Divide the batter evenly among the prepared cake pans, spreading it out into an even layer.
Bake in the preheated oven for 22-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
