Mezzo kg di marroni tagliati ed arrostiti vengono sbucciati.
Intanto si fa cuocere mezzo kg di zucchero finché si caramella, restando fluido.
I marroni, infilati in uno stuzzicadenti, vengono immersi in questo zucchero allorché non è più tanto caldo, fino a che se ne formi sul marrone uno strato.
Allora si dispongono su carta bagnata con olio d'oliva e si conservano in luogo asciutto.
