Steam Chicken with Shiitake Mushroom in Black Bean Garlic Sauce (豉汁冬菇蒸雞)

  1. Soak 5 shiitake mushrooms until soft, cut in half and set aside
  2. Cut 3 fresh Thai red chili peppers, set aside
  3. Cut 5 chicken legs into pieces
  4. Marinate chicken with 2 Tbsp of soy sauce, 1 Tbsp of minced garlic, 2 Tbsp of black soybean (either fresh beans or ready made paste would be fine), 2 Tbsp of cornstarch and 2 Tbsp of oil for few hours
  5. Mix chicken with mushroom and put red chili pepper on the top
  6. High heat steam for 20 minutes
  7. Turn off heat and let it sit for 10 minutes
  8. Sprinkle some scallions or cilantro on the top before serving
