Homemade Scallion Ginger Lobsters (薑蔥龍蝦)

  1. Prepare 3 fresh lobsters by trimming legs and clean out the black stuffs
  2. Cut lobster tail into half, then cut into 2 inches pieces
  3. Clean with 2 Tbsp of salt, then rinse and dry the lobster
  4. Add 2 Tbsp of cornstarch mix well with lobster meat
  5. Cut 6 large slices of gingers and 6 scallions. Set aside
  6. Medium heat cooking pan with 4 Tbsp of oil
  7. Add gingers and slow cook for a minute
  8. Add lobster, stir fry for a minute
  9. Add 1 tsp of salt, 2 cup of chicken broth and scallions
  10. Close the lid cook for 6 minutes
  11. Mix 1 Tbsp of cornstarch with 3 Tbsp of water, slowly add to thicken the sauce
  12. Add 1 tsp of sesame oil, ready to serve
