Noodles with Black Bean Chicken 豉汁雞球麵

  1. De-bone and de-skin 2 pieces of chicken thighs
  2. Cut chicken into large cubes
  3. Marinate chicken with 1 Tbsp of soy sauce, 1/4 tsp of white pepper powder, 1 Tbsp of cornstarch and 1 Tbsp of oil
  4. Cut half green bell pepper and one yellow onion into large cubes, set aside
  5. Pre-cooked one package/box of fresh wheat noodle (aka. Lo Mein noodle) in hot boiled water for 6 minutes, rinse with cold water and let it dry out. Set aside
  6. High heat cooking pan with 1 Tbsp of oil, add noodles stir-fry for few minutes. Set the noodles on serving plate
  7. Turn heat to medium, add 1 Tbsp of oil and 1 Tbsp of minced garlic, then add 1.5 Tbsp of black bean sauce
  8. Add chicken stir-fry until chicken turn golden brown, then add 1 Tbsp of soy sauce and 1 Tbsp of sugar
  9. Add cut bell pepper and yellow onion, then 1.5 cup of chicken broth continue cook for few more minutes
  10. Add cornstarch mixed with water to thicken the sauce
  11. Pour the chicken, bell pepper and yellow onion on top of the noodles. Ready to serve.
