Lobster Noodle Soup 龍蝦湯麵

  1. Prepare 2 lobsters (around 1.5 pounds each), lobster tails cut into 6 pieces, lobster heads cut into half. Clean the lobster meat with 2 Tbsp of salt, rinse it in cold water.
  2. Use kitchen paper towel to dry the lobster meat
  3. Light coating lobster with corn starch
  4. Medium heat cooking pot with an inch of oil
  5. Deep fry lobster once the oil is hot (~3-4 minutes), take lobster out set aside
  6. Medium heat cooking pan with 1 Tbsp of oil, add 3 large slices of gingers and 3 cut scallions
  7. Add lobster, then add 1 Tbsp of cooking wine
  8. Add 2 cups of chicken broth, pinch of salt and pepper. Close the lid cook for 4 minutes
  9. Add cornstarch mixed with water to thicken the sauce
  10. Put lobster on top of the pre-cooked noodles, ready to serve
