Si preferisca la parte più tenera, si tagli in quattro parti e si scotti in acqua bollente e leggermente salata.
Asciugati su di un canovaccio disporli nei vasi e ricoprirli con acqua bollita e raffreddata.
Chiudere i vasi ermeticamente e procedere alla sterilizzazione per 30 minuti a partire dall' ebollizione.
