Si sbucciano e si tagliano in 4 parti le mele, si adagiano nei barattoli e si ricoprono di zucchero in proporzione dell' 80 % del peso delle mele stesse.
Si chiude ermeticamente e si passa alla sterilizzazione per 20 minuti, partendo dal momento dell'ebollizione.
