Pelare le pesche ( circa 1 kg ), tagliarle a metà, togliere il nocciolo e accomodarle in vasi, badando di premerle un po'.
Versare poi nei vasi dello sciroppo freddo preparato nella proporzione di 250 g di zucchero per ogni litro di acqua.
Chiudere ermeticamente e passare alla sterilizzazione.
