INGREDIENTI

- carne e grasso di maiale
- aceto
- aglio
- vino bianco
- pepe in grani


PREPARAZIONE

Tagliare la carne e il grasso del maiale a pezzi piccoli e mischiarli ben bene con l' aceto, l' aglio, il sale, un po' di vino bianco e un po' di pepe in grani.


Si lascia in infusione per 4 o 5 gioni lavorandola tutti i giorni in modo che assorba uniformemente il condimento.

Si riempiono le budelle già preparate, e si lasciano sgocciolare.

Appendere poi in posto asciutto.
